Why sink a cellar?




Wine should be kept at certain temperature and humidity, if a wine cellar is above ground level you will need to regulate both the temperature and humidity using a climate control system. Having an underground or sunken wine cellar can create a passive climate for wine as it will reduce any temperate swings, and naturally regulate the temperature.


Wine should be stored between 7-18 degrees as long as there isn't any large temperature swings. 13 degrees is the temperature used to store wine in caves in France for short term storage and long term aging.


Natural materials tend to also help regulate the temperature.


With any type of cellar, or build below ground level, water can be a concern, it is worth looking at this before work commences - the use of tanking or the installation of a sump pump can be worth looking at.
